Crispy Sweet Potato Fries

My mother -in-law bought a bag of sweet potatoes for us. I decided to use some of it to make fries. I believe sweet potato fries would be quite special and indeed they are. 

To reaffirm my theory that frying would taste better than baking, I decided to make 2 versions of the fries; one by frying (version 1) and the other version by baking in the oven (version 2). The result is not a surprise. The fried version definitely taste better than the oven-baked version. Version 1's fries were crispy on the outside and moist in the inside whereas version 2's fries were drier. However, version 2 would be a healthier option. 

Crispy Sweet Potato Fries

Ingredients:

Sweet potatoes
Corn starch
Extra virgin olive oil
Salt
Pepper
Curry powder

Methods:

1. Preheat oven to 210ÂșC (for baked version).

2. Cut sweet potatoes into the shape of fries.

3. Coat the sweet potatoes with corn starch.

4. Drizzle some extra virgin olive oil on the potatoes and ensure that all sweet potatoes are properly coated with the oil.

5. Season with salt, pepper and curry powder.

6. Arrange the fries in a baking tray lined with non-stick baking sheet in a single layer. Bake for 15 minutes before flipping the fries over the other side. Bake for another 10 minutes till they crisp up.
(for baked version)

7. For fried version, heat oil in a wok. Fry sweet potatoes till crispy.
