Pandan Mantou



























I made these pandan mantou this evening. This is the first time I made mantou and they turn out just nice.






This is my recipe for the mantou:-

Pandan Mantou





Ingredients


Plain white dough




117ml - 120ml plain water


1/2 tbsp corn oil


200g low protein flour


1 tbsp sugar


1/2 tsp yeast


A pinch of salt




Pandan dough


117ml - 120ml pandan juice


1/2 tbsp corn oil


200g low protein flour


1 tbsp sugar


1/2 tsp yeast


A pinch of salt




Method




The 2 different doughs have to be separately kneaded. I process the white dough using the breadmaker and the pandan dough using the mixer/kneader. Throw the ingredients for the plain dough according to the above order in the breadmaker. Set it to the dough function and let the breadmaker do its job.




Put the ingredients for the pandan dough into another bowl and knead it. You can either manually knead it using your hand or let your kneader do it. Knead it for approximately 15 to 20 minutes and let it proof for around 1 hour. It should be ready for rolling when the breadmaker's dough cycle ends.




Once the dough cycle ends, remove the plain dough from the breadmaker and the pandan dough from the bowl. Flatten the doughs and stack the pandan dough on top of the plain dough. Then, rolled them into a long roll and cut it into about 10 to 11 pieces (or more depending on the size that you desired). Placed each piece on a small parchment paper. Let the mantous rest for about 5 to 10 minutes before steaming them for 15 minutes on high heat. The mantous are best served hot.



Salted Egg Tofu






Last weekend, I prepared a rather new dish that we have just ordered while eating out the previous weekend. I tried to recreate the dish at home. However, it doesn't taste as good as the one we ordered. But I think I know what it is lack of. I believe I can successfully recreate that dish the next round.


This is quite a simple dish prepared just using a few ingredients, ie soft silken tofu, salted eggs and some seasonings.

These are the dishes that I prepared for lunch on last Sunday when mum, dad and Hong came visiting. Simple dishes but I hope they like it. I know, I know....my photo-taking skill is not impressive. ;-)


Salted Egg Yolk Lava Steamed Buns








I made these buns last Saturday. I have wanted to make these for quite a while but do not have the opportunity. The opportunity presents itself when I bought a packet of salted egg. These buns are quite special as its feeling oozes out like lava.




The buns derives its yellowish colour from carrot juice. I used the recipe from here and here as reference.

I made this batch of steamed buns yesterday. I used red bean paste as the filling for these buns. When I was making these buns yesterday, Cheryl told me that she want to bring the bun to the kindie on Monday. She wanted to show it to her friends....

The Girls' 1st Concert















These are amateur photos taken using my HTC Sensation XE. I have already zoomed to the max but the images stil look very small. We were not allowed to go nearer to the stage to take any shots as the kindie have already arranged for professional photographer and videographer for the event. So, once we got the DVD, I am going to post the photos/video here.
