Yam Buns

When I prepared the mashed yam for my yam jelly mooncakes, I decided to prepare more to be used as fillings for my buns as well. Basically, I just cut the yam into small cubes and boiled them together with sugar and knotted screwpine leaves till they are soft. I then mashed them using a spoon. The yam is then ready to be used as fillings for my yam buns and yam jelly mooncakes.

Happy Mid-Autumn Festival!!

Happy Mid-Autumn Festival to everybody out there. My wedding anniversary also coincides with this festival. This is my 5th wedding anniversary. As this year's Mid Autumn Fest falls on a working day, we didn't manage to have a proper celebration. Hubby came home quite late and by the time we reached the town, it was past 10 o'clock. Most of the F&B establishment has closed for the day. Moreover, it was raining quite heavily. So, we decided to just order McDonalds (Drive-Thru).
:D
Back to the topic... I didn't manage to make so many varieties of mooncakes like the previous year. This year, I only make jelly mooncakes. I made 3 flavours, ie Cendol, Red Bean-Pandan and Yam. I feel that the Yam Jelly Mooncakes were the best among the three.

Genting Trip

During the long Hari Raya break, we went to Genting Highlands on a one-day trip. As it was a public holiday, the Theme Park was very pack with holiday-makers. Most of our time was wasted on queuing up. I think I will just let the photos do the talking....

More Breads....

I made 2 batches of breads during the Hari Raya weekend. The first batch was made on Thursday and they were completely wiped clean within one day. So, I have to bake a second batch on Friday to satisfy my "fans' appetites".

Sausage Buns

The second batch of buns that I made was that of Tuna Buns. I tried to look for the pic after baking but couldn't find any. I guess I have forgotten to take any photo of the buns after baking.

Melaka Wonderland

Last weekend, we went to Melaka Wonderland Theme Park & Resort, located in Ayer Keroh. It was open to the public on 15 May 2010 after its launching was officiated by the Chief Minister of Melaka.

We only had the chance to experienced 2 out of all the attractions there. This is the drawbacks of bringing kids there. The other attractions are not suitable for them and we can't just leave them by themselves.

Cheddar Cheese Buns

I made Cheddar Cheese Buns last Saturday. It was a self-created recipe with pattern that I obtained somewhere online. The pattern was created from a combination of at least 3 recipes. I managed to make about 6 buns and they tasted quite nice with a hint of saltiness from the cheese and sweetness from the custard.

Celine's 2nd Birthday...

I did not make any preparations for Celine's birthday celebration this year. We hade made preparation earlier to go back to Klang on that day. So, it means that I have to bake her cake a day earlier. I had to attend a neighbour's baby full moon party the day before. By the time I reached home, it is already about 9.30pm. So I have to quickly scrambled out a cake in a limited timeframe. It is a very simple sponge cake with a layer of fruits jelly on top.

Bread - Making

Raisin & Custard Snail Buns
Pandan Kaya Buns (immediately before baking)

Pandan Kaya Buns (after baking)

Pandan kaya buns left to cool on wire rack

While I am writing this, I have my breadmaker in action in the kitchen. During the past few weeks, I have been experimenting with different recipes and I am proud to say that all of them are quite successful.
:)
After I started off with sandwich loaf in the beginning stage, I have graduated to making sweet bread/buns. the raisin & custard snail buns was my first attempt at making sweet bun. Too bad my camera's battery went flat when I tried to take picture of the buns. So, I did not manage to take picture of the buns after baking.
:)
With this success, I am confident to make more buns of this sort. So, I tried making the pandan kaya buns. I initially wanted to halved the recipe but I accidentally put in some ingredients based on the full recipe. So, I have to add other ingredients to the full recipe. However, I have altered the original recipe by substituting some of its ingredients with some others which are healthier. I think by substituting some of the ingredients, I have indeed prolong its shelf life. I kept the buns for almost a week. In fact, they still stay so soft and fluffy even after so many days. If I have followed the original recipe, I believe the buns can only lasts for 3 days, the most.
:)
I got the recipes for both the above buns from here.
